Gail Mejia set up The Bread Factory in the 1990s, gathering together the best bakers in London to bake for high-end restaurants. The ironically named Factory specialised in handmade, traditional artisan baking, and continues to thrive today, serving top restaurants and discerning customers.
Over the years, Gail’s has grown and now has many branches across the country, but their philosophy remains the same: to make good food that people love, and create bakeries that people want to keep coming back to.
